Trail Mix Granola Bars

In an attempt to mix things up in the lunch boxes for back-to-school, I decided to make my own trail mix granola bars. Sure, I could just buy a box and make it easy-peasy but I’m trying to keep things a little healthier around my house when I can (and when I’m not making desserts!).

Plus, I just never know what added stuff they put in all those boxed treats. If I make it from scratch, I have control over what my kids are eating. It’s also a great opportunity to sneak a few extra things in it like flaxseed.

If you are looking for a delicious, easy-to-make treat that is a vitamin and mineral boost, you have to try these Trail Mix Granola Bars.

Trail Mix Granola Bars Ingredients:

  • 2 cups old fashioned oats
  • 1/2 cup Rice Krispies
  • 1/2 cup Chex cereal
  • 1/3 cup Flaxseed
  • 1/3 cup dried cranberries
  • 2/3 cup mini M&M’s
  • 1/3 cup sunflower seeds
  • 2/3 cup honey
  • 1/3 cup creamy peanut butter

Preparation:

1) In a large mixing bowl combine the oats, Rice Krispies, Chex cereal, flaxseed, cranberries, M&Ms and sunflower seeds. You could always add different nuts or dried fruit as well. Trail mix means you can add what you like!

2) Heat honey and peanut butter in a microwave safe dish for 30 seconds or until softened. Pour over trail mix and mix thoroughly.

3) Transfer trail mix into a 9-inch x 13-inch baking dish. Pack down firmly.

4) Refrigerate the trail mix bars for 1 hour before cutting and serving.
