Drumstick Brownie Ice Cream Dessert

Since the summer is under way, my kids have been obsessed with Drumsticks. Every time we are at the grocery store, they beg me to pick up a box. Problem is that Drumsticks are expensive. There are only 4 in a box (unless you get the big 8 cone box) and it costs about $4. That’s $1 a cone.

That is expensive when I can get popsicles for like a dime each. Plus, when they decide to hand them out to all the neighborhood kids, it can get expensive. No, they aren’t handing out the cheap popsicles – full Drumsticks for our neighbors! Gah!

So the last time we were at the store and they were begging me for more Drumsticks, I said what any crafty mom would say.

I bet I can make them and I’ll make ‘em even better.

All three kids groaned and my 8 year old rolled her eyes but they had no choice but to go along with it since I buy the groceries.

I grabbed all the ingredients of a tasty Drumstick (waffle cones, ice cream, peanuts, hot fudge, and caramel) and we headed home. On the way, I had the brilliant idea that I would make my drumsticks into bars so that they kids couldn’t just give them away to half the neighborhood. It’s not so easy when you have to grab a plate, cut a slice and sit down and eat. Bwahahahaha! Mean ole’ neighbor, aren’t I?

So, I’m thinking bars. That is when it came to me. I needed to add brownie to make it into a bar! My kids weren’t nearly as excited as I was since they were just whining in the backseat about me being the meanest mommy ever for not just getting Drumsticks. Eh…I’ve been called worse. It didn’t phase me and certainly didn’t crush my Drumstick-making spirit.

As soon as we got home, I went to town in the kitchen. I turned my kids’ favorite treat into a delectable, layered dessert. Seriously, I knocked it out of the park with this one. It turned out fabulously and makes a perfect summer treat.

Ingredients

  • Family-Size (13×9) Brownie Mix
  • 1/4 cup water
  • 1/2 cup oil
  • 2 eggs
  • ¾ cup salted peanuts
  • ¾ cup Mrs. Richardson’s Caramel
  • ¾ cup Hot Fudge
  • 6 Waffle Cones (broken into pieces and divided in half)
  • ½ Gallon Vanilla Ice Cream, softened

Step by Step Directions

1. Prepare and cook brownie mix according to box in a 13×9 inch greased pan.

2. Remove from oven and let brownies cool completely.

3. Sprinkle half of the waffle cone pieces over the cooled brownies.

4. Carefully spread softened vanilla ice cream over the waffle cone topped brownies. I let the ice cream container sit on the counter for about 10 minutes to soften and then put it in the microwave for about 20 seconds to make it soft enough to spread but not liquidy.

5. Sprinkle peanuts over the ice cream.

6. Sprinkle remaining waffle cone pieces over the peanuts.

7. Drizzle caramel over the peanuts. To make the caramel easier to pour, I heated it in the microwave for 30 seconds.

8. Heat the hot fudge in the microwave for about one minute to make it easy to pour. Drizzle hot fudge over the caramel.

9. Lightly cover with plastic wrap (I used Press n Seal) and place in the freezer for 3-4 hours to harden.

NOTE: If the dessert is difficult to cut, run your knife under hot water and that should make it easy-peasy.

Can I leave the peanuts out of this dessert?

Absolutely. Allergic to peanuts? Hate peanuts? Either way, just leave them out of this recipe and you’ll still end up with a delicious dessert.

Can I substitute different a different kind of ice cream for vanilla?

Yes. Since Drumsticks come in a variety of different ice creams, you can use whatever your favorite ice cream is.

How long do I need to freeze these ice cream dessert bars?

We recommend freezing them for 3-4 hours to get the dessert to set properly.
