Ingredients

  • 1 cup quick oats
  • 1/2 cup quinoa uncooked
  • 1/2 cup creamy nut butter of your choice (we use Sun Butter)
  • 1/8 tsp sea salt
  • 1/4 cup honey or blue agave
  • 1 tsp vanilla
  • 1 tbsp coconut oil
  • 1 tbsp chia seeds
  • 1/2 cup M&Ms

Instructions

  • Preheat the oven to 350 degrees. On a large baking sheet, spread out oats and quinoa. Toast in the oven for 10 minutes.
  • In the meantime, over low heat in a saucepan mix nut butter, sea salt, honey/blue agave, vanilla, and coconut oil. Stir often until well combined.
  • Remove from heat and mix in toasted oats and quinoa. Allow to cool for a few minutes then fold in chia seeds and M&Ms. Chocolate chips, caramels bits, or cranberries are other mix in options.
  • Line a loaf pan with parchment paper and press the mixture into the pan.
  • Place into the freezer from 15 minutes to help the bars cool and set.
  • Remove the pan from the freezer and pull out the parchment paper. Cut into 8 bars and enjoy! Store leftovers in the refrigerator.
