Ingredients
  

  • 1/4 cup red wine vinegar
  • Juice of 1 lemon
  • 3/4 teaspoon salt
  • 1/2 cup olive oil
  • 2 cups red cabbage finely chopped
  • 2 bell peppers finely chopped- (I used red and yellow)
  • 2 large seedless cucumbers diced small
  • 1 large tomato de-seeded and diced small
  • 1 small red onion finely chopped
  • 1/4 cup flat leaf parsley finely chopped
  • 1/4 cup dill finely chopped
  • 6 ounces feta cheese crumbled

Instructions
 

  • In a large bowl whisk together vinegar, salt and lemon juice. Continue to whisk while streaming in olive oil.
  • Add all of the chopped veggies to your dressing bowl and toss to coat. Taste for seasoning and adjust if necessary. Sprinkle feta cheese over top. Serve.
