Roasted red potatoes coated in parmesan cheese, garlic, Italian seasoning, salt and pepper for an easy, delicious side dish.

Preheat oven to 400 degree. Line a baking sheet with foil and spray with cooking spray.
In large bowl, add chopped potatoes, olive oil, garlic, salt, pepper, Italian seasoning and parmesan cheese. Toss to coat.
Place potatoes in a single layer on the foil-lined baking sheet and bake for 35-40 minutes. Sprinkle with parsley or parmesan cheese and serve.
