Ingredients
  

  • 1/2 cup butter softened
  • 1/4 cup oil
  • 1/2 cup granulated sugar
  • 2 tbsp powdered sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 2 1/3 cup flour
  • 1/4 tsp salt
  • 1/4 tsp cream of tartar
  • 1 tsp baking powder

Pink Frosting

  • 1/4 cup butter softened
  • 1 cup powdered sugar
  • 1 tbsp heavy cream
  • 1/4 tsp almond extract
  • pink food coloring

Instructions
 

Make the Cookies

  • Preheat the oven to 350 degrees. Use parchment paper or a silpat mat to line a baking sheet.
  • Mix butter, oil, sugar and powdered sugar in a large mixing bowl or stand mixer until smooth.
  • Add the vanilla extract, egg, and almond extract to the butter mixture and mix.
  • Add flour, salt, cream of tartar and baking powder and mix until combined.
  • Using a 1/4 cup, scoop out 9 equal dough balls. (It will be a little less than a 1/4 of cup per dough ball.)
  • Roll the dough balls into even balls and place on prepared baking sheet.
  • Spray the bottom of a glass or bowl with cooking spray, dip bowl into granulated sugar and press down on each cookie to slightly flatten. The cookies should be thick about 1/3 of an inch thick.
  • Bake for 9 minutes. Remove from oven and let cookies remain on tray to continue cooking for about 10 minutes before transferring them to a cooling rack to completely cool.

Make the Frosting

  • Cream butter, powdered sugar and almond extract until completely combined. Add in heavy cream and beat until smooth and fluffy.
  • Add in a bit of pink food coloring and mix. Spread the frosting on the chilled cookies.
