Preheat the oven to 350 degrees. Use parchment paper or a silpat mat to line a baking sheet.
Mix butter, brown sugar and granulated sugar in a large mixing bowl or stand mixer until smooth.
Add the vanilla extract and eggs to the butter mixture and mix.
Add flour, salt, crushed graham crackers, baking soda and baking powder and mix until combined.
Using a 1/4 cup, scoop out 22 equal dough balls. (It will be a little less than a 1/4 of cup per dough ball.)
Roll the dough balls into even balls and place 6 dough balls at a time on prepared baking sheet.
Slightly flatten dough balls using the bottom of a bowl or glass. The cookies should be thick about 3/4 to 1 inch thick.
Bake for 12-15 minutes. Remove from oven and let cookies remain on tray to continue cooking for about 10 minutes before transferring them to a cooling rack.
While cookies are baking, make your frosting.
Cheesecake Frosting
Whip cream cheese in mixer until smooth.
Add powdered sugar in 1/2 half of a cup at a time and continue mixing until all sugar is completely incorporated.
Add in marshmallow fluff and mix until smooth and fluffy.
Put the frosting in a gallon size Ziploc bag and cut off one corner of the bag.
Use the frosting bag to pipe frosting in a spiral on top of the warm cookies.
