Confetti Cake Cookies Mini Crumbl Copycat Recipe

Ingredients
  

Confetti Cake Cookies

  • 16 OZ pound cake mix
  • 2 eggs
  • 1 tsp baking powder
  • 1/3 cup canola or vegetable oil
  • 2 tbsp confetti sprinkles

Buttercream Frosting

  • 6 tbsp butter
  • 3 tbsp cream cheese
  • 1 3/4 cup powdered sugar
  • 1 tsp vanilla
  • pink food coloring

Instructions
 

Make the Confetti Cookies

  • Preheat oven to 350 degrees.  Use parchment paper or a silpat mat to line a baking sheet. 
  • Mix the pound cake mix, baking powder, eggs, oil together until completely combined. Scrape the sides of the bowl to make sure all ingredients are blended. Gently fold in the confetti sprinkles.
  • Scoop out 12 equal cookie dough balls (they should be about 1 TBSP of dough) and put on prepared baking sheet. Repeat with 2 other trays of cookies to make 36 total cookies.
  • Bake the cookies for 8 minutes and then let cool on the baking sheet for an additional 10 minutes. Remove cookies to cooling rack.

Make the Frosting

  • Blend butter and cream cheese together for 1 minute. Add vanilla and blend. Slowly add powdered sugar until all in incorporated. Add in a little bit of pink food coloring until the shade you desire is achieved.
  • Put the frosting in a piping bag with a star tip OR you can put the frosting in a gallon size Ziploc bag and cut off one corner of the bag.
  • Use the frosting bag to pipe frosting in a spiral on top of the cooled cookies.
