Preheat oven to 350 degrees. Use parchment paper or a silpat mat to line a baking sheet. Cream the butter, peanut butter, and sugars in a stand mixer until light and fluffy (about 2-3 minutes). Scrape the sides of the bowl to make sure all ingredients are blended.
Add in the egg and vanilla and beat until combined.
Add in flour, salt and baking powder. Mix until all combined.
Put 1/4 cup granulated sugar in a small bowl.
Scoop out about 1 tablespoon (or use a 1 tbsp cookie scoop) and roll into a dough ball. Roll each cookie dough ball in the bowl of sugar and place on the prepared baking sheet. Repeat with all the dough to make about 36 cookies. Put 12 cookie balls to a tray. Slightly flatten each cookie dough ball.
Bake for 7-8 minutes or until cookie is set and the bottom is just starting to brown.
Allow cookies to cool on the baking sheet for 10 minutes and then transfer to cooling rack.
Combine the chocolate chips and the 1 tbsp of peanut butter in a microwave safe bowl. Microwave for 1 minute. Stir. Microwave an additional 30 seconds until completely melted.
Place about a 1/2 of teaspoon of straight peanut butter on top of each cookie.
Then add a teaspoon of the melted chocolate peanut butter mixture on top of each cookie on top of the peanut butter. Spread it around a bit but don't let it go off the sides.
Top with 2 pieces of Muddie Buddies.
Lightly dust with powdered sugar.
Let the cookies set for about 15 minutes to allow the chocolate to set before enjoying.
