Toffee Pretzel Chocolate Chip Cookies

Ingredients
  

  • 1 cup butter softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1 tsp cornstarch
  • 1/4 tsp salt
  • 2 1/2 cups flour
  • 1 cup semi-sweet chocolate chips
  • 1 cup chocolate chunks
  • 1 cup pretzel pieces
  • 1 cup toffee pieces

Instructions
 

  • Preheat oven to 350 degrees.  Use parchment paper or a silpat mat to line a baking sheet. 
  • Cream the butter, brown sugar and granulated sugar in a stand mixer until light and fluffy (about 2-3 minutes). Scrape the sides of the bowl to make sure all ingredients are blended.
  • Add in the egg and vanilla and beat until combined.
  • Add in flour, cornstarch, salt and baking soda. Mix until all just combined. Do not over mix.
  • Add in the chocolate chips, chocolate chunks, pretzel pieces and toffee pieces and hand stir until it's all combined. 
  • Scoop out generous one tablespoon portions of cookie dough. I recommend a 1 TBSP cookie scoop. You can always make the cookies larger with 2 tablespoons of cookie dough per cookie but you will have to bake them a bit longer. 
  • Bake the cookies at 350 degrees for 11 minutes. Remove from oven and immediately sprinkle with sea salt. Let cool on pan for 10 minutes. Remove from baking sheet to cooling rack and enjoy warm.
