This is a delicious, easy-to-make, copycat recipe of the Crumbl Chilled Sugar Cookies. Soft, thick and delicious and dare we stay they rival the original?
Preheat the oven to 350 degrees. Use parchment paper or a silpat mat to line a baking sheet.
Mix butter, oil, sugar and powdered sugar in a large mixing bowl or stand mixer until smooth.
Add the vanilla extract, egg, and almond extract to the butter mixture and mix.
Add flour, salt, cream of tartar and baking powder and mix until combined.
Using a 1/4 cup, scoop out 9 equal dough balls. (It will be a little less than a 1/4 of cup per dough ball.)
Roll the dough balls into even balls and place on prepared baking sheet.
Spray the bottom of a glass or bowl with cooking spray, dip bowl into granulated sugar and press down on each cookie to slightly flatten. The cookies should be thick about 1/3 of an inch thick.
Bake for 9 minutes. Remove from oven and let cookies remain on tray to continue cooking for about 10 minutes before transferring them to a cooling rack to completely cool.
Make the Frosting
Cream butter, powdered sugar and almond extract until completely combined. Add in heavy cream and beat until smooth and fluffy.
Add in a bit of pink food coloring and mix. Spread the frosting on the chilled cookies.
