These jumbo muffins are stuffed with pumpkin flavor and are easy to whip up in no time.

Ingredients
  

  • 1 2/3 cup flour
  • 3/4 cup sugar
  • 1 tbsp pumpkin pie spice
  • 1/4 tsp baking soda
  • 2 eggs
  • 1 cup plain pumpkin puree
  • 1/2 cup butter melted
  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 350 degrees. Grease a jumbo muffin tin with cooking spray or use muffin liners. I adore this paper style option, so shabby chic and perfect for autumn.
  • Combine dry ingredients in a large mixing bowl. In a separate bowl mix together eggs, pumpkin, and butter. Blend together and fold in chocolate chips.
  • Bake for 25-30 minutes.

Notes

Note: If you opt to use a mini or regular muffin tin, adjust the baking time accordingly. I would recommend 12-15 minutes for minis and 18-20 minutes for regular. All that to say, if you go with jumbo, you’ll adore the moist center, that’s why we stick with the big ones!
