Three Cheese Blackberry Pesto Pizza recipe
- 1 refrigerated pizza crust
- 2 tbsp olive oil
- 2 cups blackberries separated into 1 cup and 1 cup
- 1 cup mozzarella shredded
- 1/2 cup parmesan shredded
- 1 cup ricotta cheese
- 1/4 cup pesto
Preheat the oven to 500 degrees.
On a 9×12 cookie sheet or pizza pan, roll out the pizza dough. Pierce with a fork throughout and drizzle with olive oil.
In a small mixing bowl smash 1 cup of blackberries. Use a spatula to spread the blackberry mash all over the pizza crust … it’s a sweet sauce instead of a traditional marinara! So fancy!
Top the blackberry mash with red onions, mozzarella, and parmesan. Dollop pesto and ricotta, as much as you like, and sprinkle the remaining blackberries on top.
Bake the Blackberry Pizza for 10-15 minutes, just until the cheese starts to bubble.
Drizzle with balsamic or a balsamic glaze and add a sprig or two of fresh basil.
