How about a Creamy Taco Pasta for dinner tonight? Confession time. I’ve been struggling with dinners lately. While dessert is never a problem with me, I’m just not that great at thinking of good dinner ideas. I can think of different cookies, pies, cakes and bars to make all day long but when it comes to planning dinner, I’m just not that great at it.
With school starting next week, I wanted to have some go-to, weekday dinner options top of mind. You know, something easy and quick to make that the family will still eat.
Enter Taco Pasta.
This dinner comes together in less than 30 minutes and it’s a combination of two of my family’s favorite dinners – tacos and pasta.
With only six ingredients, this is a tasty dinner that will soon be on your weekday dinner rotation.
TACO PASTA INGREDIENTS
Ground Turkey – You can easily substitute ground beef for the turkey but I wanted to keep it a bit healthier. Even meat works though.
Rotini Pasta – You can choose any shape pasta but don’t be fooled by only using 8 oz of pasta. Resist the temptation to throw in more pasta because with the meat and tomatoes, this recipe makes a perfect dinner for four. If you want more, make sure to double the other ingredients too.
Petite Diced Tomatoes – Yes, a can of regular diced tomatoes will work too.
Taco Seasoning – any packaged or homemade taco seasoning will do.
Cream Cheese – I use lite cream cheese to cut down on the fat but this recipe will work with the regular cream cheese too.
Sour Cream – Again, I use lite sour cream but feel free to use regular sour cream.
Cheddar Cheese – The cheddar is used as a topping so it is completely optional.
*You can add onion and cilantro to the pasta and cheddar cheese on top but I wanted to keep it simple.
RECIPE DIRECTIONS
Cook the pasta according to the directions. Drain the pasta but reserve one cup of pasta water.
While the pasta is cooking, over medium heat, brown the ground beef. Add taco seasoning and diced tomatoes. Simmer over low heat for 5 minutes.
Add cooked pasta, reserved water, cream cheese and sour cream to the cooked beef (turkey).
Cook over medium heat until the cream cheese is melted and all the pasta is piping hot. Simmer over low heat for 2-3 minutes.
Creamy Taco Pasta
Ingredients
- 1 lb ground beef or ground turkey!
- 8 oz dry pasta + 1 cup reserved pasta water
- 1 can 14.5 oz petite diced tomatoes, drained (I used Rotell)
- 4 Tbsp mild taco seasoning
- 3 oz lite cream cheese
- 1/2 cup lite sour cream
- cheddar cheese optional
Instructions
- Cook the pasta according to the directions. Drain the pasta but reserve one cup of pasta water.
- While the pasta is cooking, over medium heat, brown the ground beef. Add taco seasoning and diced tomatoes. Simmer over low heat for 5 minutes.
