It’s time for another decadent dessert – Pretzel Crusted Double Chocolate Caramel Cookies. With all my baking lately, my family is starting to get in on the action. Before they were all about the eating, but now they are helping me choose what to come up with next. While I was visiting my family last weekend, my sister-in-law were discussing what I should bake next.
Cookies were at the top of our list that day. You know my obsession with pretzel crust – so I thought cookies rolled in pretzel crust would be a good idea. Do I have your attention now? I should. This is going to get good. We decided a double chocolate chip cookie rolled in pretzel crust would be fantastic. Crunchy outside, soft cookie inside. Salty and sweet. Yes, please.
“Not good enough”, I told her. I had to work in some candy. Why stop with just a cookie? I do things BIG. Trying to step out of my peanut butter and chocolate obsession (temporarily!), I decided to go with a caramel candy this time.
Why not wrap a delicious Dove Caramel Silky Smooth Milk Chocolate Promises piece (you know, the one with the ooey gooey caramel inside that basically spills out when you bite into it?) with the cookie dough and roll it in pretzel crust? Done. There you have it – this is how the Pretzel Crusted Double Chocolate Caramel Cookies were born. Basically, sitting around the kitchen counter dreaming up yummy goodness! Let me warn you – these are yummy!
Ingredients
Pretzel Crust:
2 ½ cups crushed butter pretzels
1 cup melted butter
5 tbsp sugar
Cookies:
1 cup butter, softened
1 cup white sugar
1/2 cup brown sugar
2 eggs
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups Nestle Dark Chocolate Chips (Semi-Sweet works too!)

Step by Step Directions:
Preheat oven to 375 degrees.
1) Make the cookie dough. In large bowl, beat 1 c. butter and sugars together. Add vanilla. Mix. Add eggs. Mix. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips. Set aside.
2) Make the pretzel crust. Crush the pretzels in a food processor or however you like to crush pretzels. Any kind of pretzels will do but I recommend using crushed butter pretzels (you find them next to the regular pretzels and they are literally called “Synder Butter Pretzels”) for the recipe. I also recommend not crushing the pretzels to complete dust but keep some small pieces to keep the cookie crust crunchy. Mix the 1 c. melted butter (melt in microwave), sugar and pretzel crumbs.
3) Unwrap Dove Promises chocolate. This is a great step to let the kids do!
3) Take about 1 TBSP +/- cookie dough and wrap completely around one Dove Chocolate Caramel Candy. You can use as little or as much cookie dough as you want (depending on how big you want the cookies) – just make sure the candy is sealed inside the cookie dough. Make the dough ball more flattened (like a disc) instead of a completely round ball for easier baking.
4) Then take the cookie dough disc and roll in the prepared pretzel crust until completely covered.
5) Repeat with all the dough and candies.
6) Bake for 10-12 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

how many cookies will this recipe make? im using werthers caramels instead of dove, they dont sell them in canada apparently!

This looks INCREDIBLE!! I am making the pretzel crusted pb cups with the brownie mix on top for my hubby's birthday. He is pretty excited!! thanks for the great recipes!

looks great but reese's peanut butter cups have a suspected carcinogen. TBHQ
I'd not feed it to my children and boycott them till they change ingredient.
