Recipe: Banana Peanut Butter Cupcakes

If you’ve never tried the delicious combination of peanut butter and banana, you’re missing out. These delicious Banana Peanut Butter cupcakes have just the right amount of both!

Ingredients for cupcakes:

2 eggs

2 and a half cups flour

1 and a half cups white sugar

2 tsp baking powder

1 tsp baking soda

Half tsp salt

1 cup of mashed bananas (about 3) The more ripe, the better.

3/4 cup milk

1/2 cup shortening

2 tsp vanilla

Ingredients for frosting-

1 cup of creamy peanut butter

1 stick of butter

2 cups powdered sugar

4 tbs milk

2 tsp vanilla

-Directions for cupcakes:

Dump all of your ingredients into a bowl. One of the reasons why I love this recipe is because you don’t have to mix anything specifically.

-After everything is mixed, your batter should be of a nice consistency.

-Line cupcake pan with cupcake liners and pour your batter in. I like to fill my cupcakes more than half full, almost to the top because I find it easier to frost when they are poped up above the liners.

-Bake in a 350 degree oven for around 20 minutes. I recommend watching your cupcakes though because oven times really vary. Take them out when they are fully cooked and a nice light golden brown.

-Take your cupcakes out and let them cool until they are completely cool.

-Directions for the peanut butter frosting-

Put all of your frosting ingredients in a bowl.

-Use a mixer to mix everything together nicely.

-Your frosting should be of a nice consistency with no lumps or bumps.

-Once your frosting is done and your cupcakes are completely cooled it’s time to frost!

You can either put your frosting in a ziplock bag and frost in circles, or you can simply frost with a knife like I did.

CUPCAKE INGREDIENTS

  • 2 eggs

PEANUT BUTTER FROSTING

  • 1 cup creamy peanut butter
  • 1/2 cup butter
  • 2 cups powdered sugar
  • 4 tsp milk
  • 2 tsp vanilla

Instructions
 

TO MAKE CUPCAKES

  • Simply dump all ingredients into a mixing bowl and mix until well blended.
  • Line your cupcake tray with cupcake liners.
  • Fill the cupcake liners with batter more than half way full.
  • Bake in a 350 degree oven for around 20 minutes but be sure to watch them as oven times vary.
  • Take them out of the oven and cool completely.

TO MAKE FROSTING

  • Mix all ingredients until well blended.
  • Frost your cupcakes!

I halved the recipe thinking I didn't want 4 dozen cupcakes sitting around. But I only got 1 dozen then. Very tasty!
