It’s time for Cheesy Taco Chicken! Ok you guys, who else is obsessed with their crockpots? I don’t know about you, but during the summer (or anytime really) I would much rather be out playing in the sunshine or laying out near my pool with my son than slaving away in front of my hot oven when it’s over 100 degrees outside.
This is where the beauty of the crockpot comes in. It does all the work for you and after you come home, your food is almost completely ready! You really can’t beat that. So today I am sharing a really delicious and really simple recipe for cheesy taco chicken with you all today. I hope you’ll try it and love it!
- 1 package of boneless, skinless, chicken breasts
- 1 can of black beans
- 1 can of corn
- 1 can of green chilis
- 1 jar of salsa
- 1 can of enchilada sauce
- 1 packet of taco seasoning
- 1 package of shredded cheddar cheese
Start by putting your chicken breasts at the bottom of your crock pot.
Place half of your cheddar cheese on top of the chicken.
Put your corn, chilies, and black beans on top.
Next, layer your salsa, taco seasoning, and enchilada sauce on top.
Put the rest of your cheese on top and mix everything together.
Put the lid on your crock pot and cook on high for about 6-8 hours. Check on it after 6 hours.
After everything has cooked for awhile you should easily be able to shred your chicken using two forks.
That’s all you have to do! So easy, right? This stuff is delicious all on its own but I also love to serve it up with a side of Spanish rice and tortillas to make it into burritos. You could also add sour cream, avocado, and so much more!

Recipe: Cheesy Taco Chicken In The Crock Pot
- 1 lb chicken
- 1 can black beans corn, green chilis, enchilada sauce, and salsa.
- 16 oz cheddar cheese shredded
- 1 package taco seasoning
- For burritos: Spanish rice and tortillas
- Throw everything into your crock pot and cook on high for 6-8 hours.
- Serve up with rice and tortillas for burritos!
