Today I wanted to share my recipe for beautiful and fun Valentine’s Day cupcakes with you all. These are delicious red velvet cupcakes with pink vanilla frosting.
I got into the spirit of love by decorating them with red sugar, heart sprinkles, and large conversation hearts. These would be fun to make for your children’s classroom, to bring to your work place on Valentine’s Day or just to make with your kids any day this month to get in the Valentine’s Day spirit.
Ingredients for Red Velvet Cupcakes: (makes 24 cupcakes)
2 and a half cups flour
1/2 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup of butter
2 cups of sugar
4 eggs
1 cup sour cream
1/2 cup milk
1 bottle (1 oz) of red food coloring
2 teaspoons vanilla
Ingredients for Pink Vanilla Frosting:
1/3 cup butter, softened
3 cups powdered sugar
2 teaspoons vanilla
2 tablespoons milk
Pink food coloring (You can find this at Target in the Valentine’s Day baking section or you could just use red food coloring and only use a few drops so it comes out pink)
** Decorations like Conversation hearts, pink or red sugar crystals, and heart sprinkles.
Beat butter and sugar in a large bowl on medium speed.
Add all other ingredients.
Mix on low speed just until blended.
Line a cupcake tray with cupcake liners and spoon batter into cupcake liners.
Bake in a 350 degree oven for 20 minutes.
Once your cupcakes are done baking, let them cool on a wire baking sheet or plate for at least 30 minutes before you frost them. They should be completely cool before you start frosting.
To make your frosting, simply mix all the ingredients in a large mixing bowl with an electric mixer.
For fun, color your frosting pink with pink food coloring, or use just a few drops of red food coloring so it comes out pink.
Frost your cupcakes!
I simply used a knife to frost my cupcakes but you could also put your frosting in a zip lock bag and frost them that way, too.
Use fun decorations to complete the Valentine’s Day look.
I picked up red sugars and some red and white heart sprinkles from the Valentine’s Day baking section of Target.
Decorate your cupcake however your heart desires. If you don’t want sprinkles all on the top you could roll the sides of the cupcakes in sprinkles so they are all around the edges.
I picked up a big bag of the large conversation hearts to complete my look. Nothing says Valentine’s Day like conversation hearts right?
There you have it! Easy, fun, gorgeous Valentine’s Day cupcakes that anyone would love! Not only are they delicious, they look cute and your kids would love making these with you and passing them out to friends and family!
