Funfetti Cheesecake Cookies

It’s time for Funfetti Cookies. Believe it or not, I’ve never made Cake Mix Cookies. Never. I guess I’m old-fashioned that way because I almost always make my cookies from scratch. Unless I’m in a pinch and need to pop some of those refrigerated cookies in the oven but that’s doesn’t really count.

I make my cakes from a box and my brownies from a box, but the cookies are more often than not, from scratch.

Until today.

While I was browsing Pinterest this weekend (what else would I be doing!), I saw these super fun funfetti cake mix cookies. They caught my eye because of the sprinkles, of course! What kid (or adult for that matter!) doesn’t like sprinkles.

Sprinkles make me happy. They are just so colorful and can brighten up any dessert. When I saw how easy this cake mix cookie recipe thing is, I knew I had to try it. Seriously, just a box of cake, box of pudding, oil, eggs and vanilla? Really? That’s it? Sure, this one throws in white chocolate chips and extra sprinkles for good measure but really THAT easy? Yep!

And the icing on the cake is that they are good! REAL GOOD! Soft…chewy…delicious! Seriously, don’t be surprised if you see more Cake Mix Cookies featured on Skinny Not Skinny soon!

Preparation:

1. Preheat oven to 350 degrees F.

2. In a large bowl, mix the cake mix, pudding mix, oil, eggs and vanilla until completely combined and dough forms.

3. Stir in the 1/4 cup sprinkles and 1/2 cup chocolate chips. (I added more sprinkles than the original recipe because I LOVE sprinkles and it makes them more fun!)

4. With a cookie scoop or just a spoon, scoop cookie dough balls onto baking sheets. Use the remaining 1/4 cup white chocolate chips to press into the tops of each cookie to make them look even tastier.

5. Bake for 8-10 minutes, or until slightly golden brown. The centers of the funfetti cookies will still be very soft. Cool for at least 10 minutes before serving.

  • 15 oz Funfetti Cake mix
  • 3.4 oz instant jello cheesecake pudding
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/4 cup sprinkles
  • 3/4 cup white chocolate chips divided
