Summer season is around the corner and that means two things. One, wonderful weather that will take us outside often. Two, I have less time for meal prep and definitely don’t want to spend that short time with the heat of the stove or oven. That’s why this recipe for Greek Orzo Pasta is perfect for summertime! It can tag along for outdoor picnics and doesn’t require any heat. Win win!
This dish is prepared in two easy steps. First, a simple homemade vinaigrette. And then the heart of the dish – pasta and all the fixings! First up, mix together the following for your vinaigrette:
- 1/2 cup olive oil
- 2 tablespoons garlic
- 1 teaspoons oregano
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/4 teaspoon pepper
Set the vinaigrette aside and prepare 16 ounces of orzo pasta according to the package directions. Rinse and cool with cold water and add to a large salad bowl. Stir in the following:
- 1/2 cup pine nuts
- 1/2 cup raisins
- 1/2 cup kalamata olives, chopped
- 4 oz feta cheese
- 1/2 cup minced red onion
- 3/4 cup fresh spinach, minced
