Recipe: Brownie Cookies

I consider it a really good day when the hardest decision I have to make is, “Do I make brownies … or cookies for dessert?” Realistically, my dream would be to whip up both! A brownie for one hand and a cookie for the other. Because really, how is a girl supposed to decide between two amazing desserts? But, in favor of avoiding a sugar overload I usually compromise with just one and in this case, a compromise is a VERY delicious thing — BROWNIE COOKIES!

Brownie cookies are just that, a brownie and a cookie in one! They’re easy to make and with a dash of powdered sugar look quite fancy.

If you’re looking for a yummy dessert for a regular weekday or something to gift someone you love just because or for a holiday, look no further than brownie cookies. Everyone loves them!

INGREDIENTS

  • 6 tablespoons salted butter
  • 2 tablespoons shortening
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup white all-purpose flour
  • 1/2 cup baking cocoa
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • Powdered sugar – for topping

DIRECTIONS

Preheat the oven to 350 degrees and line a baking sheet with parchment paper for easy clean up.

In a mixing bowl, cream together butter, shortening, and sugars. Add the egg and vanilla and blend well.

In a separate bowl, whisk remaining dry ingredients – flour, cocoa, baking powder, and baking soda. Slowly pour into wet ingredients and mix.

Scoop dough, about 2 inch rounds, onto the parchment paper and bake for 12-14 minutes or just until the tops no longer look wet. Don’t overbake! Remove from the oven, sprinkle with powdered sugar and allow to cool before eating.
