Ready to merge two amazing worlds? Thai and Italian … oh yes! You wouldn’t naturally put them together, but let me tell you, these flavors are beautiful partners! Especially on pizza!
My mom is always up for collaborating on a recipe and she dreamed up a tasty one with this thai chicken pizza. After a long morning of laundry and coraling kiddos we whipped them up some mac ‘n cheese and layered this perfect thai chicken pizza for us.
We each served up one hearty slice … then another … then just a skinny slice more. Talk about a DELICIOUS pizza! If you’re a fan of thai flavors, there is no doubt you’ll fall in love with this fancy pizza.
Thai Pizza Ingredients
- Refrigerated pizza dough – I’m a big fan of the one from Trader’s Joes
- 1 tablespoon olive oil
- 2 chicken breasts, cooked and sliced
- Salt and pepper
- Peanut sauce – I’ve tried many homemade versions but nothing beats River Wave foods and their recipe
- 2 cups mozzarella cheese, shredded
- 4 green onions, diced
- 1/2 cup bean sprouts
- 3/4 cup shredded carrots
- 3 tablespoons roasted peanuts, chopped
- 2 tablespoons cilantro
Directions
Heat olive oil in a stovetop pan and cook chicken, seasoned well with salt and pepper. Remove from the pan and slice. It’s also an option to skip this step and use sliced rotisserie chicken.
Roll out pizza dough on a circular pizza pan or stone. Spread peanut sauce on top, layer sliced chicken and top with 1 cup of mozzarella. Sprinkle on half the green onions, bean sprouts, and carrots. Add 1 cup of mozzarella. Add the rest of the green onions, bean sprout, and carrots as well as the peanuts. Drizzle with peanut sauce.
Bake at 500 degrees for 10-12 minutes or until cheese is bubbly and crust is golden.
Remove from the oven and add chopped cilantro. Serve with a side of peanut sauce for dipping.
