It’s a cookie that is a chocolate chip cookie and brownie cookie smushed together to great a soft, chewy, delicious treat.

BROOKIE COOKIES INSTRUCTIONS
1. Preheat oven to 350 degrees. Use parchment paper or a silpat mat to line a baking sheet.
2. Cream the butter and brown sugar in a stand mixer until light and fluffy (about 2-3 minutes). Scrape the sides of the bowl to make sure all ingredients are blended.
3. Add in the egg and vanilla and beat until combined.
4. Add in 2 cups of flour, cornstarch, baking soda, baking powder and salt. Mix until all combined.

5. Remove half the dough from the mixing bowl and set aside.
6. Add the remaining 1/4 cup flour into the dough in the mixing bowl and mix well. Stir in the 1/2 cup chocolate chips. Remove the dough from the mixer and place the other half of the dough in the mixer.
7. Add the cocoa powder to the dough and mix well. Stir in 1/4 cup chocolate chips.

8. With a cookie scoop or spoon, scoop about 1 tbsp ball of chcoolate brownie dough. Roll into an even ball. Take the same size scoop of chocolate chip cookie dough. Roll into a ball.

9. Smoosh the two balls together and roll them into 1 large ball. Repeat for each cookie. Place dough balls on prepared pan (12 cookies to a pan if small cookies and 6 to a pan if BIG cookies).

10. Bake the cookies for 10-12 minutes. The cookies will look very soft, puffy, and almost undone. Allow the cookies to cool on the cookie sheet and they will continue to “bake” and set up. As they cool, the cookies will firm up.
