Easy Oven Baked S’mores Bars

Oven Baked S’mores are one of my favorite desserts. Chocolate + Marshmallows + Graham Crackers = Deliciousness not matter which way you look at it. There are so many varieties of s’mores. You can make bite-size S’mores Dessert Cups, Waffle S’mores, S’mores Dip, or Peanut Butter S’mores Bars and those are just a few ideas.

Sure, s’mores are super popular in the summer but what about those s’mores cravings in the winter when there is no campfire nearby? That’s when it’s time to make Easy Oven-Baked S’mores Bars. These are so good that you may never just have regular old s’mores again.

What are S’mores?

A s’mores is traditionally a campfire snack or dessert with toasted marshmallows and a layer of chocolate placed between two pieces of graham cracker.

Who originally came up with this delicious treat though? Well, it’s not exactly clear but Wikipedia has some great theories.

S’more is a contraction of the phrase “some more”. S’mores appeared in a cookbook in the early 1920s, where it was called a “Graham Cracker Sandwich”. The text indicates that the treat was already popular with both Boy Scouts and Girl Scouts. In 1927, a recipe for “Some More” was published in Tramping and Trailing with the Girl Scouts.

The contracted term “s’mores” appears in conjunction with the recipe in a 1938 publication aimed at summer camps. A 1956 recipe uses the name “S’Mores”, and lists the ingredients as “a sandwich of two graham crackers, toasted marshmallow and ​12 chocolate bar”. A 1957 Betty Crocker cookbook contains a similar recipe under the name of “s’mores”.

Now, that you know all you need to know about traditional s’mores, it’s time to switch things up and make one of the most delicious s’mores treats that you’ll ever eat.

OVEN BAKED S’MORES DIRECTIONS

  • Preheat the oven to 350°F. Line an 8-inch square pan with parchment paper.
  • In a medium saucepan, melt the butter over medium-low heat. Whisk in the brown sugar, milk and vanilla and heat for about one minute. Remove the pan from the heat and stir in the graham cracker crumbs. It will be a thick liquid substance.

  • Lay a single layer of graham crackers to cover the bottom of the prepared pan.

  • Spoon a third of the graham cracker paste over the graham cracker layer. Carefully, spread around.

  • Sprinkle a third of the marshmallows on top.

  • Followed by a third of the chocolate chips.
  • Repeat this process three times so that you have three layers of each “ingredient”.

Bake at 350 degrees for 14-16 minutes and marshmallows are browned on top. Let the Oven Baked S’mores cool in pan. Serve and enjoy.

Ingredients
  

  • 1/2 cup butter cut into pieces
  • 1/2 cup milk
  • 1 tsp vanilla
  • 3/4 cup brown sugar
  • 1 1/2 cup graham crackers crushed
  • 15 graham crackers
  • 6 cups mini marshmallows

Notes

A good variation is adding 1/4 cup melted peanut butter on top of each brown sugar/butter level to create a peanut butter s’mores.
These are best enjoyed after they have been out of the oven for at least an hour so that everything can firm up a bit. If I’m in a hurry, I’ll throw the pan in the freezer (on a hot pad) for about 20 minutes before serving if it’s still too gooey.
