Easy S’mores Cookies Recipe

As we approach the summer months, s’mores are going to be all the rage. Like pumpkin is to fall, s’mores is the flavor of summer. Crispy graham crackers, gooey marshmallow and creamy chocolate is one of my absolute favorite summer treats. I them so much I enjoy them year round. Today, I’m sharing a quick and easy s’mores cookie recipe that you are going to want to make week after week this summer.

What are S’mores?

A s’mores is traditionally a campfire snack or dessert with toasted marshmallows and a layer of chocolate placed between two pieces of graham cracker.

Who originally came up with this delicious treat though? Well, it’s not exactly clear but Wikipedia has some great theories.

S’more is a contraction of the phrase “some more”. S’mores appeared in a cookbook in the early 1920s, where it was called a “Graham Cracker Sandwich”. The text indicates that the treat was already popular with both Boy Scouts and Girl Scouts. In 1927, a recipe for “Some More” was published in Tramping and Trailing with the Girl Scouts.

The contracted term “s’mores” appears in conjunction with the recipe in a 1938 publication aimed at summer camps. A 1956 recipe uses the name “S’Mores”, and lists the ingredients as “a sandwich of two graham crackers, toasted marshmallow and ​12 chocolate bar”. A 1957 Betty Crocker cookbook contains a similar recipe under the name of “s’mores”.

S’MORES COOKIE INGREDIENTS

  • Butter – salted or unsalted will work.
  • Granulated Sugar
  • Brown Sugar – dark or light brown sugar will work
  • Eggs
  • Vanilla Extract – use the REAL extract and not the imitation
  • Flour – all-purpose works best
  • Baking Soda
  • Salt
  • Graham Crackers (crushed)
  • Mini Marshmallows
  • Chocolate Bar Pieces
  • Chocolate Chips

HOW TO MAKE S’MORES COOKIES

1. Whisk together the flour, graham cracker crumbs, baking soda and salt in a medium bowl. Set aside.

2. Cream the butter, brown sugar and granulated sugar in a stand mixer until light and fluffy (about 2-3 minutes). Scrape the sides of the bowl to make sure all ingredients are blended.

2. Add in the eggs and vanilla and beat until combined.

3. Add in flour, graham cracker, baking soda, and salt mixture. Mix until all combined.

4. Scoop out dough balls of about 1 TBSP of dough and place on a plate lined with wax paper or parchment paper. Chill for 1 hour. If you are in a hurry, pop the dough balls in the freezer for 30 minutes.

5. Preheat oven to 350 degrees.

6. When dough is properly chilled, bake at 350 degrees for 8-9 minutes.

7. Remove the cookies from the oven and place 3-5 mini marshmallows on the top of each cookie. Return cookies to oven for additional 2-3 minutes.

Easy S’Mores Cookies

Ingredients
  

  • 3/4 cup butter
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 3/4 cup flour

  • 1/2 tsp salt
  • 3/4 cup chocolate bar pieces
  • 1 cup chocolate chips
  • 2 cups mini marshmallows

Instructions
