Between Little Debbie and Hostess, I’m not sure which snacks I ate more of growing up. While I was a big fan of the Little Debbie Nutty Bars and Snack Cakes and the Hostess Cupcakes and Ding Dongs, the Cosmic Brownies from Little Debbie seems to be a favorite in my house right now.
The soft, chewy brownie topped with fudgy frosting and colorful candy pieces finds its way into my kids’ lunch boxes more often than I like to admit.
Now, you know our obsession with Crumbl Cookies, right? Well, they introduced a delicious Galaxy Brownie Cookie which is a twist on the favorite Little Debbie snack a while back. As soon as I saw the giant, fudgy brownie cookie topped with a chocolate ganache and sprinkled with chocolate candies, I was in heaven.
With Crumbl’s rotating cookie menu, they don’t offer the Cosmic Brownie Cookie every week. Boooo.
So, we make our own. Yep, today I’m sharing with you how to make your own delicious Cosmic Brownie Cookies that are probably better than Crumbl’s version. You be the judge.

WHAT ARE CRUMBL COOKIES?
Crumbl is a rather new cookie bakery that was started by two cousins in Logan, Utah in 2017. Cousins, Sawyer Hemsley and Jason McGowan set out to create the world’s best chocolate chip cookie. After some trial and error, testing ingredients and baking methods, Sawyer, Jason and their family opened up the first Crumbl store in Utah when Sawyer was still attending Utah State University.

WHAT YOU NEED TO MAKE GALAXY BROWNIE COOKIES
COOKIE INGREDIENTS
- All-Purpose Flour
- Dark Cocoa Powder
- Baking Powder
- Salt
- Butter – softened
- Eggs
- Brown Sugar – light or dark will work
- Granulated Sugar
- Vanilla Extract
- Semi-Sweet Chocolate Chips – we use Ghirardelli
GANACHE INGREDIENTS (AND TOPPING)
- Semi-sweet Chocolate Chips
- Heavy Cream
- Rainbow Candy Chips – You can grab these off Amazon or they are sold in grocery store baking aisles.
HOW TO MAKE COSMIC BROWNIE COOKIES
1. Preheat the oven to 350 degrees. Use parchment paper or a silpat mat to line a baking sheet.
2. Mix flour, cocoa powder, baking powder and salt in a small bowl and set aside.
3. Melt the butter and chocolate chips in a saucepan over low-medium heat. Stir continuously until melted. Remove from heat and set aside.
4. In stand mixer, beat eggs, brown sugar and granulated sugar on high speed for 3-4 minutes until the mixture is light and airy.
5. *You want to do these next steps by hand. Slowly add in the chocolate and butter mixture to the egg mixture in the mixing bowl and fold together with a spatula.
6. Slowly add in the dry ingredients and continue to fold together with spatula until just combined.
7. Divide cookie dough into 12 equal sized cookie dough “blobs” and place them on your prepared baking sheet. NOTE: The dough will look more like brownie batter than cookie dough. THAT IS PERFECT! Put 6 cookies per baking sheet. (This recipe makes BIG cookies, so if you’d like smaller cookies, divide dough into 18 cookies.)
8. Bake cookies at 350 degrees for 12 minutes (about 10 minutes if you make smaller cookies!).
9. Remove from oven and let cookies cool on baking sheet for 10 minutes. Remove to cooling rack and let the cookies cool completely.
How to Make the Ganache
Add chocolate chips and heavy cream to a small, microwave-safe bowl and microwave for 30 second increments (stir between increments) until completely melted and smooth.
Spoon 1-2 tablespoons of chocolate ganache on top of each brownie cookie and sprinkle with Rainbow Candy Chips.
Absolutely. If you make the recipe as is, just divide the dough into 18 cookies. That will give you a more manageable sized cookie.

Crumbl Cosmic Brownie Cookie Copycat Recipe
Ingredients
- 1 cup all-purpose flour + 2 TBSP flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt

- 2/3 cup brown sugar

- 1/4 cup heavy cream
- 1/4 cup Rainbow Candy Chips

I use Bob’s Red Mill 1 for 1 gluten free baking flour, and these come out perfectly every time! This is such a great recipe!
