Honestly, I don’t know why I wait until September to pull out my autumn-inspired recipes. Pumpkin is delicious all year round!
The kids and I gobbled these jumbo muffins down in just one day. Eek! One for breakfast, one for a morning snack, and another after dinner, because, why wait on this fall goodness?

PUMPKIN IS THE FLAVOR OF FALL
If there was one scent or flavor to describe Fall, I’m almost guaranteeing you that you’d say pumpkin. Pumpkin spice takes over everything in our lives as soon as the first leaf drops from the tree. There’s Pumpkin Spice Lattes, Pumpkin Pie Pancakes, Pumpkin Scones, Pumpkin Biscuit Loaf, Pumpkin Muffins, and even Pumpkin Mac & Cheese.
Jumbo Pumpkin Chocolate Chip Muffins
Ingredients
- 1 2/3 cups flour
- 3/4 cup sugar
- 1 tablespoon pumpkin pie spice
- 1/4 teaspoon baking soda
- 2 eggs
- 1 cup plain pumpkin puree
- 1/2 cup salted butter, melted
- 1 cup chocolate chips
Directions
Preheat oven to 350 degrees. Grease a jumbo muffin tin with cooking spray or use muffin liners. I adore this paper style option, so shabby chic and perfect for autumn.
Combine dry ingredients in a large mixing bowl. In a separate bowl mix together eggs, pumpkin, and butter. Blend together and fold in chocolate chips.
Bake for 25-30 minutes.
Note: If you opt to use a mini or regular muffin tin, adjust the baking time accordingly. I would recommend 12-15 minutes for minis and 18-20 minutes for regular. All that to say, if you go with jumbo, you’ll adore the moist center, that’s why we stick with the big ones!
