This Salted Caramel Cheesecake Cookie Crumbl Copycat recipe turns out delicious, super soft, thick graham cracker based cookie topped with cheesecake frosting with caramel drizzle that rivals the originals that you can grab in the Crumbl store.

These cookies are really simple to make and the entire family agreed that they taste EXACTLY like Crumbl cookies.
WHAT ARE CRUMBL COOKIES?
Crumbl is a rather new cookie bakery that was started by two cousins in Logan, Utah in 2017. Cousins, Sawyer Hemsley and Jason McGowan set out to create the world’s best chocolate chip cookie. After some trial and error, testing ingredients and baking methods, Sawyer, Jason and their family opened up the first Crumbl store in Utah when Sawyer was still attending Utah State University.

ABSOLUTELY! These cookies are surprisingly easy to make even though they look so elegant and taste so delicious when you are done. They are great to bring to a party, get-together, BBQ or anywhere you want to impress friends and family.
WHAT YOU NEED TO MAKE SALTED CARAMEL CHEESECAKE COOKIES
COOKIE INGREDIENTS
- Butter
- Granulated Sugar
- Brown Sugar
- Eggs
- Vanilla Extract
- Graham Crackers, crushed
- All-Purpose Flour
- Salt
- Baking Soda
- Baking Powder
CHEESECAKE FROSTING INGREDIENTS
- Cream Cheese
- Powdered Sugar
- Marshmallow Fluff
- Caramel Dip
- Sea Salt
HOW TO MAKE CRUMBL CHEESECAKE COOKIES (COPYCAT VERSION)
1. Preheat the oven to 350 degrees. Use parchment paper or a silpat mat to line a baking sheet.
2. Mix butter, brown sugar and granulated sugar in a large mixing bowl or stand mixer until smooth.
3. Add the vanilla extract and eggs to the butter mixture and mix.
4. Add flour, salt, crushed graham crackers, baking soda and baking powder and mix until combined.
5. Using a 1/4 cup, scoop out 22 equal dough balls. (It will be a little less than a 1/4 of cup per dough ball.)
6. Roll the dough balls into even balls and place 6 dough balls at a time on prepared baking sheet.
7. Slightly flatten dough balls using the bottom of a bowl or glass. The cookies should be thick about 3/4 to 1 inch thick.
8. Bake for 12-15 minutes. Remove from oven and let cookies remain on tray to continue cooking for about 10 minutes before transferring them to a cooling rack.
9. While cookies are baking, make your frosting.
HOW TO MAKE CHEESECAKE COOKIE FROSTING
- Whip cream cheese in mixer until smooth.
- Add powdered sugar in 1/2 half of a cup at a time and continue mixing until all sugar is completely incorporated.
- Add in marshmallow fluff and mix until smooth and fluffy.
- Put the frosting in a gallon size Ziploc bag and cut off one corner of the bag. Use the frosting bag to pipe frosting in a spiral on top of the warm cookies.
- Sprinkle with sea salt. Serve cookies warm.
EXPERT TIPS
Absolutely. If you don’t need quite so many cookies, definitely cut the ingredients in half. I make half of this recipe all the time.
Yes. While I really enjoy the caramel drizzle addition, my daughter thinks it can sometimes be too sweet.
Yes. 1/4 of a cup of dough does make big cookies similar to Crumbl but you can always add more or use less dough on each dough ball.
