This Easy Crockpot Lasagna Soup will keep you warm (and not in the kitchen forever!) all winter long. Since we are headed into the dark days of winter, it’s time to brush off the Crockpot (if you already haven’t!) and start making your life easier with more crockpot recipes. It’s pretty darn cold down here in the South which means we need warm soups and comfort food stat! Enter the Lasagna Soup!

Today, I’m sharing a fantastic, easy-to-make Crockpot soup that the entire family will love.
Traditional lasagna is a favorite dish in my house but sometimes we like to switch things up a bit and do something different. Plus, this lasagna version is so much EASIER to make than traditional lasagna.
INGREDIENTS:
- 1 Pound of Ground Beef
- 3 Cups of Beef Broth
- 1/2 Tablespoon Garlic
- 1 Tablespoon of Parsley
- 1 Tablespoon Basil
- 1/2 Cup Onion (chopped)
- 1 – 28oz can of diced tomatoes
- 1 – 6 oz can of tomato paste
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup V8 Vegetable Juice
- 1 cup water
- 2 cups uncooked shell pasta
DIRECTIONS:
- Brown the ground beef in a skillet.

2. Add all the ingredients (EXCEPT THE WATER AND PASTA!) to a slow cooker or crockpot. Stir.

3. Cook on low for 7-8 hours OR on high for 4 hours.
4. Add pasta and water.

5. Cook for 30 more minutes in the Crockpot.
6. Serve and enjoy. I always serve the Lasagna Soup with garlic bread or french bread or you can try our Garlic Herb Twists recipes as it would go splendidly with this soup.
