Chocolate Chip Cookie Dough Sandwich Cookies

If chocolate chip cookie dough is your jam, then these are the cookie sandwiches for you! Two deliciously soft chocolate chip cookies sandwiched with edible cookie dough to create a cookie sandwich of your dreams.

These cookies are super easy to make and will be the hit of any cookie exchange, holiday party or get together. Sure, you have to chill the dough with this recipe but it’s not very long and you’ll be making the frosting anyway. Since we’ll be making edible (eggless) cookie dough, it’s always safest to heat treat the flour that you’ll be using. Don’t worry, that’s easy too.

HOW TO HEAT TREAT FLOUR

If you are using raw flour in no bake desserts, such as this edible cookie dough frosting, you’ll want to heat treat the flour. According to the FDA, flour is considered unsafe to eat because of the potential to the presence of harmful microbes.There are two main ways to heat treat flour: oven or microwave.

HEAT TREATING FLOUR OVEN METHOD:

  1. Preheat oven to 350 degrees F.
  2. Spread two to three cups of flour on a baking sheet and spread out in a thin layer.
  3. Cook for 5 minutes. Let cool completely before adding the flour into the recipe.

HEAT TREATING FLOUR MICROWAVE METHOD:

  1. Place 2 – 3 cups of flour in a heat safe bowl.
  2. Microwave for 30 seconds at a time and stir after each segment.
  3. Heat flour for 1-2 minutes and the flour is at 160 degrees.
  4. Let cool completely before adding the flour into the recipe.

Cookie Dough Chocolate Chip Cookies

CHOCOLATE CHIP COOKIE INGREDIENTS

1. Cream the butter in a stand mixer until smooth and creamy. Add brown sugar and sugar and mix until light and fluffy (about 2-3 minutes). Scrape the sides of the bowl to make sure all ingredients are blended.

2. Add in the egg and vanilla and beat until combined.

3. Add in flour, cornstarch, baking soda, and salt. Mix until all combined.

4. Add in the mini chocolate chips and blend for a few seconds until just combined.

5. Cover and chill for 30 minutes.

HOW TO MAKE COOKIE DOUGH FROSTING

6. Beat the butter in a stand mixer (or with a handheld mixer) for about 1 minute until creamy.

7. Add in the brown sugar and mix until combined.

8. Add in vanilla, flour and salt and mix on low speed. Add milk and continuing mixing until everything is incorporated. Then switch your mixer to high speed and beat for 2 minutes until the frosting is creamy and smooth. Stir in chocolate chips. Set aside.

BAKE AND ASSEMBLE COOKIE SANDWICHES

9. Preheat oven to 350 degrees.  Use parchment paper or a silpat mat to line a baking sheet.

10. Remove cookie dough from refrigerator. Scoop out about 1 TBSP of dough and roll into balls in your hand. Place dough balls on prepared pan. (12 cookies to a pan)

11. Bake for 8-10 minutes. Allow cookies to cool on the pan for 5-10 minutes before transferring to a cooling rack. Cool cookies completely before making sandwiches.

12. Sandwich about 2 tbsp of cookie dough frosting (more or less depending on your taste!) between two cooled cookies.

Store these cookies in the refrigerator in an airtight container for up to 3-5 days.

Ingredients
  

Chocolate Chip Cookies

  • 3/4 cup butter
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 2 tsp vanilla

  • 1 cup mini chocolate chips
