Not only are we full swing into the baking season but October is Breast Cancer Awareness Month. I thought we could all use a little more pink in our lives as a reminder. These Pink Confetti Cake Cookies are the perfect, yummy recipe to make for a party, birthday, get together, sporting event or just as a snack. I made these for the high school tennis team.
They are super easy to make because you use just a handful of ingredients for the cookies including a pound cake mix. Yes, pound cake mix. These are officially considered “Cake Cookies” because of the pound cake and we are here for it. So yummy!
Also, if you didn’t gather from the title, this is another CRUMBL copycat recipe. It doesn’t taste EXACTLY like the Crumbl version but it’s pretty darn close and delicious. One thing we didn’t do that CRUMBL is known for is make cookies as big as our head with this recipe. We opted for a smaller, three-bite, more manageable cookie and it worked perfectly.

WHY ARE CRUMBL COOKIES SO BIG?
Great question! It’s just kind of their “thing”. They are known for giant cookies. They are so big that they actually list their cookies as TWO servings when you are in the Crumbl store. That doesn’t mean you have to make your Crumbl cookies as big at home. We didn’t.
This recipe makes 24 cookies because I recommend making them smaller than Crumbl would. Instead of a “shareable cookie” this is a bite-sized cookie that you won’t feel so guilty eating. I would assume Crumbl using about 1/4 of a cup of cookie dough for each cookie and I suggest about 1 tablespoon in order to make them a more manageable size.
If you prefer GIANT cookies, make only 10-12 cookies with this recipe and they will be GIANT!! If you prefer smaller cookies, make 24 with the dough. So, you do you.
CONFETTI CAKE COOKIES INGREDIENTS

CONFETTI CAKE COOKIES STEP BY STEP DIRECTIONS
1. Preheat oven to 350 degrees. Use parchment paper or a silpat mat to line a baking sheet.
2. Mix the pound cake mix, baking powder, eggs, oil together until completely combined. Scrape the sides of the bowl to make sure all ingredients are blended. Gently fold in the confetti sprinkles.
3. Scoop out 12 equal cookie dough balls (they should be about 1 TBSP of dough) and put on prepared baking sheet. Repeat with 2 other trays of cookies to make 36 total cookies.
4. Bake the cookies for 8 minutes and then let cool on the baking sheet for an additional 10 minutes. Remove cookies to cooling rack.
FROSTING INGREDIENTS
- Butter – Slightly softened
- Powdered Sugar
- Cream Cheese – Room temperature
- Vanilla – use the real vanilla extract and not the imitation
- Pink Food Color
FROSTING INSTRUCTIONS
- Blend butter and cream cheese together for 1 minute.
- Add vanilla and blend.
- Slowly add powdered sugar until all in incorporated.
- Add in a little bit of pink food coloring until the shade you desire is achieved.
Put the frosting in a piping bag with a star tip OR you can put the frosting in a gallon size Ziploc bag and cut off one corner of the bag.
Use the frosting bag to pipe frosting in a spiral on top of the cooled cookies.

Ingredients
