Valentine’s Day Heart Peanut Butter Cookies Recipe

Valentine’s Day is right around the corner which means we need to start celebrating. Sure, it may feel like a Hallmark holiday but there is nothing wrong with celebrating love and we are doing it with peanut butter cookies.

Especially with how 2020 ended up throwing us into a pandemic and 2021 not giving us the end in sight that we had hoped, let’s just celebrate with some good ole’ cookies.

I wanted to make cookies this week that make me happy. Peanut butter and chocolate ALWAYS make me happy. Plus, throw an adorable chocolate heart on top or roll them in rainbow sprinkles, how can you be mad at that?

Peanut Butter Cookies

One of my favorite type of cookies is peanut butter. They are so easy to make that you can have the dough whipped up before your oven preheats. Yup, that easy.

Plus, peanut butter cookies are pretty versatile. You can make them plain with a criss cross pattern on top. You can add them to a layered cookie bar. If you can’t decided between chocolate and peanut butter cookies, you can put the two together and make swirl cookies. You can even add 6 different types of chips to peanut butter cookies to make our delicious 6 Chip Peanut Butter Cookies. Or you can roll them into balls and place a delicious dark chocolate heart on top like we are going to do today.

How Many Ingredients do Peanut Butter Cookies Need?

There are many types of peanut butter cookie recipes you can make. Sure, you can whip up a batch with just 3 ingredients if you are short on time or short on ingredients. I think that should be reserved for desperate measures though and shouldn’t be your go-to peanut butter cookie recipe.

I think to achieve a really good soft in the center, slightly crunchy on the outside peanut butter cookies, you’ll need a few more than just 3 ingredients. Not a ton more ingredients but a few. That doesn’t make this recipe will take you loads of time. It won’t. It may add less than 5 minutes to your preparation time and it’s worth it.

Unwrap the chocolates as the cookies bake. Don’t wait until they are out of the oven.

Add the chocolate heart to the peanut butter cookies as soon as they come out of the oven. If you wait, the cookies will set and they will either crack or be harder to get the chocolate to stay.

Do not overbake the cookies. Since the cookies only take about 7-8 minutes to bake, watch them carefully.

Store in an air tight container.

Ingredients

  • 1 stick butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup peanut butter
  • 1 egg
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 2 1/2 cups flour
  • 1 bag Dove Dark Chocolate Hearts

INSTRUCTIONS

Heat oven to 350°F. In large bowl, beat granulated sugar, the brown sugar, peanut butter, butter and eggs with electric mixer on medium speed. Stir in flour, baking soda and baking powder.

Shape dough into 1-inch balls; roll in additional granulated sugar.

Place about 2 inches apart on ungreased cookie sheet. Bake 7 to 8 minutes or until edges are light brown. Immediately press 1 chocolate heart in center of each peanut butter cookie.

Remove from cookie sheet to wire rack.

FUN ALTERNATIVE

Instead of rolling the peanut butter cookie dough balls in sugar, roll in sprinkles. This gives a fun crunch to the cookies and makes them look so cute!

  • 1 stick butter

  • 1/2 cup creamy peanut butter
  • 1 egg
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1 1/2 cups flour
  • 8 oz bag of Dove Chocolates

Instructions
 

  • Heat oven to 350°F. In large bowl, beat sugar, the brown sugar, peanut butter, butter and eggs with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and baking powder.
  • Shape dough into 1-inch balls; roll in additional granulated sugar. Place about 2 inches apart on ungreased cookie sheet.
  • Bake 8 minutes or until edges are light brown. Immediately press 1 chocolate heart in center of each cookie. Remove from cookie sheet to wire rack.
  • FUN ALTERNATIVE: Roll cookie dough balls in colored sprinkles instead of sugar.
